Tending the vineyards

The Al-Cantàra winemaking process begins with meticulous attention to the land: great wine always starts from outstanding raw material.

We practise green manure, a traditional organic method of soil fertilisation, and the vineyards are managed entirely by hand. The harvest is entrusted to expert women, able to recognise the grapes at their different stages of ripeness.

Listening to the vines

Selective hand harvest

The harvest is guided by a philosophy of "listening to the vines": the rows are walked several times, at different moments, to pick only the bunches at their ideal ripeness.

It is a painstaking process that brings out the nuances of each variety. 14 of the 15 wines are vinified as single varietals, to express the elegance of the native Etna grapes.
