First on Etna

In collaboration with the Faculty of Agriculture of the University of Catania, we have developed an innovative phytodepuration system, composed of three ponds set at descending levels.

The wastewater from production flows into the first basin and then, in a cascade, passes through each stage, where bacteria, microorganisms and the planted vegetation purify it naturally. The selected plants not only cleanse the water but also foster local biodiversity, contributing to a healthy, regenerated ecosystem.

Relict Vineyards

Guardians of historic vines

Al-Cantàra is devoted to preserving relict vineyards: historic vines that once populated the Etna region and which, over time, have nearly vanished. They are an invaluable viticultural heritage.

Working with the University of Catania, we study their potential for high-quality wines, preserving the winemaking history of Etna and restoring varieties at risk of disappearing.
